New Years Resolutions: Banana Oatmeal Bread

So I'm slightly behind the curve here (it is January 10th) but its time to talk about New Years Resolutions.    I feel that since my birthday is so close to the end of the year and I started my thirty by thirty list I didn't really think about New Years Resolutions.   But I think the number one thing that I need to do this year is make sure that I'm taking care of myself.  Whether that be going to the gym, eating healthier, getting more sleep or making sure that I truly do take time for "Michelle time".  

So while it's not a cupcake, here is a recipe that may help you all that want to help yourselves this year.  One of my favorite foods are bananas.  I buy them EVERY time I go to the grocery store and I have myself convinced that the only way for me to have a successful workout is if I've eaten a banana that day.  But I almost always put the bananas in the fruit bowl and forget them on the way to work.  So by the end of the week I have a bunch of rotten bananas and a bunch of crappy workouts. So while I was home over winter break with time to spare, I decided to try to find a way to use those rotten bananas without making my waistline rotten as well.  And that's when I discovered Weight Watchers Banana Oatmeal Bread.

I have so many friends that have success with weight watchers that you know that their recipes have to be good.  My friend Karen is actually a WW leader and has an awesome blog about her weight loss.  And if you want to see success.... well just look at my Mom!

What I find about WW recipes is that they are very easy to adapt to make them taste a little better without sacrificing the nutritional value.  And that's exactly what I did with this recipe.  

It was a REALLY easy recipe.  And it was so tasty!  If you notice in the picture above, I made a point of cutting it into pre-portioned slices so that I could really keep track of how much was being eaten.   Otherwise i find myself taking "a little sliver" here and there and I end up with nothing left!   Ha! 

And whats great about this recipe is that it TOTALLY could be transformed into cupcakes.....I just didn't even think about it until writing this post!  It was a quick and easy bake and took care of some leftovers and AND was healthy..... if that's not a perfect way to start the new year, I don't know what else is!

Banana Oatmeal Bread 

1-1/4 cups all-purpose flour
1/2 cups unpacked brown sugar
1/2 tsp table salt
1/2 tsp baking powder
1 tsp cinnamon
3 tsp canola oil
1 large egg, beaten
2 egg whites, beaten
3 large bananas, ripe
1 cup old fashioned (not quick!) oats
